GLUTEN FREE HIGH PROTEIN BANANA/ALMOND PANCAKES

This is the perfect pre-workout breakfast that helps you go longer, faster and stronger!  The potassium in the bananas improve muscle performance and strength, the antioxidants in the chia seeds also help prolong your energy levels, as well as, the fibre and fat in the almonds because they help stabilize your blood sugar levels.  I added the Greek Yogurt Cream to up the protein content.

INGREDIENTS:

  • 1 Ripe banana, mashed
  • 2 Whole eggs or ½ cup of Egg whites.
  • 1 Tbsp of Coconut Flour
  • 1 Tbsp of Ground Chia seeds
  • ½ Tbsp of Almond Butter
  • Coconut Oil for cooking

GREEK YOGURT CREAM:

  • ½ cup Non-fat Greek Yogurt
  • ½ Tbsp good quality Vanilla Extract
  • 1 tsp Stevia (or to taste)

INSTRUCTIONS:

  1. Brush a Ceramic non-stick pan with enough Coconut oil to coat and set heat to medium/low.
  2. Mix all the ingredients in a bowl until well combined.
  3. Spoon mixture on to heated pan (makes 3 pancakes).
  4. While pancakes are cooking, mix Cream ingredients into bowl and refrigerate.
  5. Flip pancakes when bottom is golden brown, they are done when cooked through.
  6. Serve with Greek Yogurt Cream immediately.

These take just a few minutes to prepare and feel free to add chopped almonds or walnuts, fresh berries or even maple syrup (if you have a very sweet tooth).
