This is a salad that I enjoy that’s served at the local Health Food store in my town. I created my own version of it and I was pleased at the way it turned out! Its fresh, crunchy and has a bit of sweetness from the dried cherries.INGREDIENTS:
- 1 cup of chopped Broccoli
- 1 cup of chopped Cauliflower
- ½ cup of chopped Carrots
- ¼ cup of chopped Red Onion
- ½ cup of dried Cherries
- ½ cup of slivered Raw Almonds
DRESSING:
- ¾ cup of Fat Free Greek yogurt
- 2 Tbsp of Veganaise
- 2 Tbsp of Apple Cider Vinegar
- Salt and pepper to taste
INSTRUCTIONS:
- Combine Dressing ingredients and keep refrigerated until needed.
- Combine Salad ingredients in a large bowl.
- Add Dressing and mix well.
- Refrigerate for 2 hours and serve cold.
This recipe keeps for 4 days in the fridge and is perfect own its own or served with chicken or fish. Enjoy!
