RAW BROCCOLI SALAD WITH GREEK YOGURT DRESSING

This is a salad that I enjoy that’s served at the local Health Food store in my town.  I created my own version of it and I was pleased at the way it turned out!  Its fresh, crunchy and has a bit of sweetness from the dried cherries.INGREDIENTS:

  • 1 cup of chopped Broccoli
  • 1 cup of chopped Cauliflower
  • ½ cup of chopped Carrots
  • ¼ cup of chopped Red Onion
  • ½ cup of dried Cherries
  • ½ cup of slivered Raw Almonds

DRESSING:

  • ¾ cup of Fat Free Greek yogurt
  • 2 Tbsp of Veganaise
  • 2 Tbsp of Apple Cider Vinegar
  • Salt and pepper to taste

INSTRUCTIONS:

  1. Combine Dressing ingredients and keep refrigerated until needed.
  2. Combine Salad ingredients in a large bowl.
  3. Add Dressing and mix well.
  4. Refrigerate for 2 hours and serve cold.

This recipe keeps for 4 days in the fridge and is perfect own its own or served with chicken or fish.  Enjoy!
